Thank you for visiting my candy store for Halloween. Today I have several treats for you … and no tricks! I offer you a trio of fairly easy candy recipes. You won’t need a candy thermometer, and you don’t have to laboriously temper chocolate. And, if you are the impatient type (aren’t we all when it comes to treats), the truffles are ready in just a few minutes.

Each recipe that I adapted was already vegan. There is no baking involved, so high altitude was not a problem. Any changes I made were to finesse textures and include ingredients that I prefer. I also chose treats that were a little bit healthier so I wouldn’t get too crazy a sugar buzz. I hope you enjoy these treats, and have a Happy Halloween!

Matcha Nut Truffles adapted from Pistachio and Matcha Truffles

1/4 cup pistachios
1/4 cup macadamia nuts
9 medjool dates, pitted
1 TBS chia seeds
1 TBS hemp seeds
2 TBS vegan chocolate chips
3/4 tsp vanilla extract
1 teaspoon matcha green tea powder

Add everything except the matcha to a food processor. Process until well combined, with a somewhat crumbly texture. Add the matcha powder and process again. Pour the mixture out into a bowl. Take a spoonful of the mixture in your palm and squeeze tightly, then roll it into a ball. Place on a dish and repeat with the rest of the mixture. Store in the fridge in an airtight container. Makes 10-12 truffles.

Chocolate-Covered Caramel Rolls

1.25 cups medjool dates, pitted
1 cup raw cashews
1 tsp maca powder
pinch sea salt
1 TBS vanilla extract
1.5 cups vegan chocolate chips

Line a baking sheet with parchment paper and set aside. In a food processor, combine the dates, cashews, maca, salt, and vanilla. Process until the cashews are broken down to tiny flecks and the mixture starts to form a ball. The mixture will be a bit sticky. If it is not, then add another date or two and process again. Take a spoonful of the mixture and roll it between your palms. Place each roll on the parchment-lined sheet. Put the baking sheet in the fridge for 10 minutes to cool.

Meanwhile, melt the chocolate chips in the top of a double boiler. When melted, remove the chocolate from the heat. Place a cooled roll on a fork, quickly dip it into the chocolate. Let the excess chocolate drip off, then place it on the parchment-lined sheet. Repeat with remaining rolls. When all are dipped, put the cookie sheet in the fridge until the chocolate is firm. Store in the fridge in an airtight container. Makes 24-30 rolls.

Cool Peppermint Patties

organic powdered sugar for baking sheet
1 TBS raw cashew butter
2.5 TBS refined coconut oil, in solid form
1.5 tsp agave syrup
1/8-1/4 tsp peppermint extract, or to taste
2 tsp organic powdered sugar
1/2 cup vegan chocolate chips

Line a baking sheet with parchment paper, sprinkle lightly with powdered sugar, and set aside. In a bowl, use a spatula to combine the cashew butter, coconut oil, agave, peppermint extract, and 2 tsp powdered sugar. Place the bowl in the fridge for 10 minutes for the mixture to get firm. When the mixture is a scoopable consistency, take a small amount and roll it into a ball. Flatten the ball into a disc and place on the prepared baking sheet. Repeat with the remaining mixture, then place the sheet back in the fridge for 15 minutes.

Prepare another baking sheet with parchment paper and set aside. Melt the chocolate chips in the top of a double boiler. When melted, remove chocolate from the heat and let it cool slightly. When cooled, take a large dollop of chocolate and place it on the prepared baking sheet. Swirl it into a thick disc with the back of a spoon. Place a peppermint disc on top of the chocolate, then place another dollop of chocolate on top of that. Swirl the chocolate around to coat the peppermint disc. Refrigerate the coated patties until firm. Store in the fridge in an airtight container for up to one week. Makes 15 patties.

Recently a local tea shop offered a matcha green tea tasting. Being a lover of all things tea, I attended and brought along hubby so we could experiment together. We learned that he is not a big fan of matcha, being a coffee aficionado. But I left with the inspiration to bake with the green tea powder. The challenge was to make it palatable for hubby, so I found a matcha cookie recipe and used a matcha / cocoa blend to appeal to his taste for chocolate. The result was a light, not too sweet cookie that we both enjoyed.

To veganize the recipe I replaced the butter with vegan margarine. My high altitude adjustment was to introduce a little non-dairy milk to counteract the dryness. You may think that adding tea to a recipe would make the cookie gritty, but matcha is powdered, not ground. If you find that your matcha is a little chunky, then sift it before measuring out the amount. These cookies are an eye catching green, but I couldn’t resist getting artistic and drizzling them with chocolate.

Cocoa Matcha Shortbread based on Matcha Green Tea Shortbread Cookies
2 cups all purpose flour
1 TBS matcha with cocoa powder blend
1⁄2 tsp salt
1 cup vegan margarine, at room temperature
1⁄2 cup organic powdered sugar
2 tsp non-dairy milk
chocolate chips, for garnish
Sift flour, matcha, and salt into a bowl. In the bowl of a stand mixer, beat margarine and powdered sugar until fluffy. Add non-dairy milk and beat again. Add flour mixture to mixer bowl and mix slowly until dough just comes together. Form dough into a log that is 2” in diameter. Wrap dough log in parchment paper and place in freezer for 30 minutes or until dough has firmed to the touch.
Preheat oven to 325F. Slice dough into 1/4” rounds and place on a parchment lined cookie sheet, 1” apart. Alternatively, take dough from freezer, pinch off round balls, place on cookie sheet, and flatten with the palm of your hand. Bake for 16 to 18 minutes (or until cookies are just starting to turn golden around the edges), turning pan halfway through baking time. Remove cookies immediately from cookie sheet and cool on a wire rack. Melt chocolate chips in a double boiler on the stove. Decorate cookies with melted chocolate. Store in an airtight container.

Mother’s Day is a good excuse to have brunch. Creating a baked treat that is fast and simple makes brunch easy. These muffins have only a few ingredients and don’t require anything fancy except, perhaps, the mini muffin pan. But mini muffins are great because they cook faster and makes lots to share. And I like saying Matcha Mini Muffins for Mom.

My high altitude adaptations were few – more flour and less baking powder. But I replaced some of the white flour with whole wheat for a healthier treat. If you omit the icing the recipe has no added sugar, but I made the icing with lemon for a good taste pairing with the matcha flavor. Mom is sure to love these muffins because they are not too sweet, even with a little icing. And the subtle green hue and taste from the matcha is fun if you are preparing tea. Here’s to Mom!

Matcha Mini Muffins for Mom adapted from Matcha Latte Mini Muffins

1/2 cup whole wheat flour
1/2 cup + 1 TBS all purpose flour
2 tsp matcha powder
3/4 tsp baking powder
1/4 tsp salt
1 cup vanilla dairy-free creamer (use coconut, soy or almond milk coffee creamer)
3 TBS grapeseed oil
1/2 tsp vanilla extract
icing
1/4 cup + 1 TBS powdered sugar
1/2 TBS non-dairy milk
1/4 tsp lemon juice
Preheat oven to 400ºF and use cupcake liners in 24 mini muffin wells. In a bowl, whisk together flours, matcha, baking powder and salt until well combined. In another bowl, whisk together creamer, oil, and vanilla. Gradually add flour mixture, stirring until just combined. Divide batter between muffin wells; they should be ¾ full.
Bake for 10-12 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Remove to a wire rack to cool completely. Prepare icing by whisking together the icing ingredients in a bowl. Dip tops of cooled muffins into prepared icing, turn upright, and place back on rack while icing sets.
