On New Year’s Eve, I love to spend the day snacking on appetizers and small bites. Many are savory but, of course, I need to satisfy my sweet tooth, too.

Puff pastry is the perfect vehicle for bite-sized morsels, sweet or savory. For my holiday celebration, I fill the pastry with a combination of sweetened cream cheese and barely-sweetened homemade jam. The tart and sweet flavors play well against each other. They are also pretty tasty when followed with a sip of champagne or bubbly mocktail.

Cranberry Cream Cheese Puff Pastry Bites

Equipment

  • 2 12-cup muffin tins

Ingredients

  • cup blueberry-pomegranate juice or other berry juice
  • 1 ½ cup fresh cranberries
  • ¼ teaspoon lemon peel
  • 1 tablespoon agave syrup
  • ¼ teaspoon vanilla
  • 6 ounces vegan cream cheese at room temperature
  • cup vegan vanilla yogurt
  • 1 pear
  • 2 sheets puff pastry thawed (a 17.3 oz box)

Instructions

  • Preheat oven to 400F. Grease 18 cups of muffin tins very well with cooking spray.
  • Place the juice, cranberries, and lemon peel in a small pot over medium-low heat. When you hear the cranberries popping, remove the pot from the stove. Mash the berries with a potato masher or the back of a spoon. Add the agave and vanilla and stir to combine.
  • Put the cream cheese and yogurt in a medium bowl and stir with a spoon to combine.
  • Slice the pear into thin, bite-sized shapes. (You won’t use an entire pear.)
  • Unfold thawed puff pastry sheets onto a lightly floured board. Gently roll each sheet with a rolling pin to remove the creases. Use a sharp knife or pizza cutter to cut each sheet into 9 even squares. (You should have a total of 18 squares cut out).
  • Place one square of pastry into each muffin cup, pushing down slightly to form a cupped shape. Place a heaping teaspoon of cream cheese mixture onto each pastry, then follow with a heaping teaspoon of cranberry mixture and a piece of pear.
  • Bake for 25 minutes, or until the edges of the pastry are golden brown. Let the muffin tins cool on a wire rack for 5 minutes, then gently remove each pastry bite to a wire rack to cool further.
  • These are best when freshly baked baked, but you can store leftovers in an airtight container in the fridge for up to 3 days.

Notes

You can use store-bought jam if you don’t want to make the cranberry mixture. I used seedless blackberry jam for some of mine.

New Year’s Eve Raspberry Brownie Truffles

To celebrate the year’s end, a bit of chocolate is nice with champagne. Truffles and bubbly make a great pairing, along with a touch of raspberry. It makes me look forward to popping the cork on a bottle of sparkling wine.

To keep the truffles from causing too much of a sugar rush while sipping champagne, I borrowed the idea of using dates as the sweetener and adding nuts for a protein hit. That may sound too healthy but, trust me, these truffles are also decadent. They are the perfect way to welcome the New Year.

New Year’s Eve Raspberry Brownie Truffles inspired by Raspberry Chocolate Truffles

1 cup raw cashew pieces
pinch fine sea salt
1/2 cup date paste
1/4 cup seedless raspberry jam
1/2 cup unsweetened cocoa powder
1-2 teaspoons non-dairy milk
4 ounces dark chocolate, broken into pieces
raspberry-flavored vegan jello mix (I used Simply Delish raspberry gel dessert)

Line a baking pan with parchment paper and set aside.

Place the cashews in a food processor and pulse until they have a fine crumb, similar to almond meal.

Add the processed cashews to a large bowl along with the salt, date paste, raspberry jam, and cocoa powder. Stir until a thick dough forms, adding non-dairy milk as needed. Place the dough in the fridge while you melt the chocolate.

Melt the chocolate in a bowl set over a pot of gently simmering water. When the chocolate has almost fully melted, turn the burner off and stir the chocolate until smooth. If your kitchen is cold, leave the double boiler on the stove to keep the chocolate warm.

Remove the bowl of chocolate dough from the fridge. Scoop out small balls of dough and place them on the parchment lined pan. Place a truffle ball on a fork and dip it into the melted chocolate. Let the excess chocolate drip off then place the coated truffle back on the lined pan. Before the chocolate sets, sprinkle a bit of jello mix overtop the truffle. Repeat until you have no more chocolate balls.

Vegan Honey Mini Cakes for a Sweet New Year

This week was a celebration of the Jewish New Year. The tradition is to eat honey cakes at this time to ensure sweetness in the upcoming year. Because honey is not a vegan food, vegan bakers can turn to a honey substitute to have a sweet new year.

I have a honey-like syrup in my files from my “A Sweet New Year Apple Muffins,” so I went in search of a honey cake recipe that I could use it in. What I found was perfect because the spices in the cake would go well with the fruit in the vegan honey. Also, the cake was already vegan, but I amped it up by using my own egg substitute described in “Super Flegg – A Perfect Egg Substitute.”

Next I put the high altitude spin on it by adding flour and liquid (in the form of applesauce), then reduced the leaveners. The batter was divvied into mini cake pans to help with rise issues caused by altitude, but that had an added bonus. I now had several mini cakes so each person could have their own tasty treat to enjoy while ringing in the new year.

Vegan Honey Mini Cakes for a Sweet New Year adapted from Vegan Honey Cake for Rosh Hashanah

for the vegan honey
1/4 cup brown rice syrup
1/8 cup pure maple syrup
1/8 cup agave syrup
1/2 teaspoon vegan sugar
1/2 organic orange, thinly sliced
1/2 organic lemon, thinly sliced
for the cakes
1 tablespoon ground flaxseeds
3 tablespoons aquafaba (the liquid from a can of chickpeas)
1.5 cups whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1.25 teaspoons ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/2 cup + 2 tablespoons unsweetened applesauce
1/4 cup canola oil
1 teaspoon vanilla extract
1/3 cup raisins, optional

To make the vegan honey, combine the syrups and sugar in a medium saucepan with high sides. Place over medium heat and bring to a boil. Add the sliced fruit. Lower the heat and cook at a low boil for 15 minutes, stirring a few times. Adjust the heat as needed to maintain a low boil. Once a syrupy consistency is reached, pour the liquid through a mesh strainer into a heat-safe measuring cup, discarding the fruit. If you do not have 1/2 cup of syrup, then add agave syrup to reach that amount. Set aside to cool.

For the cakes, preheat the oven to 350F. Grease and flour the cups of a mini cakes pan, or a muffin tin.

Prepare the super flegg by putting the ground flaxseeds and the aquafaba in a small bowl and stirring well. Set aside to thicken.

Sift the flour, baking powder, baking soda, cinnamon, ginger, and cloves into a large bowl. Place the applesauce, oil, vanilla, vegan honey, and super flegg into a medium bowl and whisk to combine. Add the wet ingredients to the dry and stir to combine. Stir in the raisins, if using.

Divide the batter among the cups of the pan you are using. Do not fill the wells completely or your cakes will overflow while baking. Bake for 18 to 23 minutes, depending on the pan used, or until a toothpick inserted in the center of a cake comes out with a few small crumbs. Place the baking pan on a wire rack for 10 minutes, then tip the cakes onto a wire rack to fully cool.

Easy Spanakopita Appetizers

Today’s post is not about my usual tempting desserts, but it is still decadent. The dish is a savory appetizer, but one so creamy and tasty that you’ll find it disappears quickly. It is perfect for a holiday platter, especially for New Year’s Eve festivities.

This recipe was shared by a friend at a cooking get together. I made minor alterations for my taste preferences, but essentially it’s the recipe provided to the class. It was already vegan, and can be made at any altitude. And, with pre-baked vegan fillo shells, you can make these in no time.

Easy Spanakopita Appetizers

2 TBS olive oil, divided
1/2 cup chopped onion
1 TBS minced garlic
1 pound frozen chopped spinach, thawed and drained
8.1 oz Violife Just Like Feta
8 oz Kite Hill Ricotta Alternative
2 TBS finely minced dill leaves (no stems)
2 tsp lemon juice
1/8 tsp salt, or to taste
2 (1.6 oz) packages The Fillo Factory Mini Fillo Shells

Preheat oven to 350F. Add 1 TBS olive oil to a pan on medium heat. Add the onion and cook until almost translucent. Add the garlic and cook until just starting to brown. Transfer the onion-garlic mixture to a bowl. Wipe out the warm pan and add the additional 1 TBS olive oil. Add the spinach and cook until warmed through. Stir the onion-garlic mixture into the warm spinach in the pan. Crumble the feta into the pan and stir in the ricotta and dill. Cook just until the cheese softens. Add the lemon juice and salt and stir to combine.

Transfer the filling to a food processor and process until just blended. Taste and adjust for dill, lemon juice, and salt. Transfer the filling to a piping bag. Arrange the fillo shells on a parchment lined baking sheet. Pipe the filling into the shells. Bake for 7-10 minutes, or until the shells are just browned on the edges. Eat while still hot.

A Sweet New Year Apple Muffins

The Jewish New Year is celebrated this weekend. The holiday offers new beginnings at a time when hope is welcome. Traditionally, apples are dipped in honey, two symbols of the sweetness and joy of a new year. Although it may seem a long way off until the Gregorian calendar ends in December, now I give you a festive treat of apple muffins drizzled with bee-free honey.

For the muffin, I tweaked a recipe already in my repertoire. I traded peaches for apples, used applesauce as the liquid, and scattered apple pieces over the tops — all chosen for the most apple flavor. For the vegan honey-like drizzle, I adapted a recipe I learned at Rouxbe Online Culinary School. The end result was like dipping apples in honey, but in muffin form.

A Sweet New Year Apple Muffins adapted from my Cardamom Peach Morning Muffins

1 cup all purpose flour
1 cup whole wheat pastry flour
1/4 tsp fine sea salt
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
1/4 cup agave syrup
3 TBS canola oil
1 tsp vanilla extract
1/2 cup unsweetened applesauce
1 tsp apple cider vinegar
1/3 cup + 2 TBS non-dairy milk
1.25 cup apples, peeled and diced into small cubes, divided
vegan honey (recipe to follow)

Preheat oven to 375F and line a muffin tin with paper liners. In a large bowl, sift together the flours, salt, baking powder, baking soda, and cinnamon. In a medium bowl, whisk together the agave, oil, vanilla, applesauce, apple cider vinegar, and milk. Pour the wet ingredients into the dry ingredients and whisk until the batter is just smooth. Gently stir in 1 cup of apples.

Spoon the batter evenly into the prepared muffin tin. Sprinkle the remaining 1/4 cup of apples onto the tops of the muffins. Bake the muffins for 18 to 20 minutes, or until golden. Cool the muffin tin on a wire rack for 5 minutes, then gently remove each muffin and place on a rack to cool completely.

While the muffins are cooling, make the vegan honey. When the muffins have cooled, drizzle each with a generous spoonful of the warm honey. Store in an airtight container, at room temperature, for 1 day.

Vegan Honey

1/2 cup brown rice syrup
1/4 cup pure maple syrup
1/4 cup agave syrup
1 tsp vegan sugar
thinly sliced orange, organic
thinly sliced lemon, organic

Combine the syrups and sugar in a medium saucepan with high sides. Place over medium heat and bring to a boil. Add the sliced fruit. Lower the heat and cook at a low boil for 15 minutes, stirring a few times. Adjust the heat as needed to maintain a low boil. Once the desired consistency is reached, pour the syrup through a mesh strainer into a jar, discarding the fruit. Cover and refrigerate leftovers for up to 2 weeks.

New Year’s Eve spiced nuts

The following snack is fun to have on-hand to munch on this New Year’s Eve. Its decadent taste can get you through until the grand dinner is served, or it can be eaten alongside any cocktail. You can choose one nut, or a mixture as I did. The flavorings can also be chosen to suit your palate, making this a munchie with endless combinations.

Traditionally, flavored nuts use egg white as a coating, which is decidedly non-vegan. But the recipe I found uses a double toasting and a wet coating to bring out the taste. It originally made a sweet nut, but I wanted something savory for a change. Whether you prefer sweet or more herbaceous, this is still a treat worthy of any celebration.

New Year’s Eve Spiced Nuts adapted from Quick Candied Nuts by America’s Test Kitchen

1 cup unsalted nuts (such as a mix of walnuts, pistachios, almonds, and cashews)
1 TBS spices (such as a mix of dried rosemary, smoked paprika, ancho powder, and garlic powder)
1/2 tsp organic sugar
1 TBS hot water
1/8 tsp sea salt

Adjust oven rack to middle position and heat oven to 350F. Spread nuts in a single layer on a rimmed baking sheet and toast until fragrant and slightly browned, 8 to 12 minutes, shaking sheet halfway through toasting. Transfer nuts to a plate and let cool for 10 to 15 minutes. If doing more than one type of nut, then toast each individually as they have different cook rates. Place dirty baking sheet aside.

Grind together all spices in a spice grinder until powdered and mixed. Line now-empty sheet with parchment paper. Whisk spice blend, sugar, hot water, and salt in a large bowl until sugar is mostly dissolved. Add nuts and stir to coat. Spread nuts on baking sheet in a single layer and bake until nuts are crisp and dry, for 10 to 12 minutes.

Transfer sheet to a wire rack and let nuts cool completely, for 15 minutes. Nuts can be stored at room temperature for up to 1 week.

For my New Year’s Eve Celebration I had to come up with something special. Something chocolate. And champagne. And strawberry. I saw pipette kits for infusing cupcakes with liquid and knew I had my solution. I just had to bring it all together.

My standby chocolate cupcake recipe was the base so I didn’t need to make adjustments there. I added powdered dried strawberries to the frosting to complement the champagne that would be imbued into the cupcakes. I now had a decadent dessert worthy of ringing in the New Year. Happy and Decadent 2017 to all!

Strawberry Champagne Celebration Cupcakes

1 cup almond milk
1 tsp apple cider vinegar
3/4 cup organic sugar
1/3 cup canola oil
3/4 tsp vanilla extract
1 cup + 1 TBS all-purpose flour
1/3 cup Navitas Naturals cacao powder
generous 1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
frosting
1/2 cup nonhydrogenated shortening
1/2 cup nonhydrogenated margarine
3 1/2 cups organic powdered sugar, sifted if clumpy
1 TBS powdered freeze dried strawberries (I used Just Strawberries)
3/4 tsp vanilla extract
1/4 cup almond milk

For Cupcakes: Preheat oven to 350F and line a 12-cupcake pan with paper liners. Whisk together the milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add sugar, oil, and vanilla to the milk mixture and beat until foamy.
In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat just until no large lumps remain. Pour evenly into liners, filling three-quarters of the way. Bake 18-19 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and cool completely.
For Frosting: Beat shortening and margarine together until well combined and fluffy. Add powdered sugar and beat for 3 more minutes. Add dried strawberries, vanilla and milk and beat for another 5-7 minutes until fluffy.
For Decorating: Frost cooled cupcakes. Dip pipettes into champagne and draw some liquid up into the bulbs. Insert pipettes into cupcakes without squeezing; you will squeeze them just before eating.
