Just in time for Sunday brunch – I needed bread that would go great alongside eggs and mimosas. Strawberries are available everywhere so they were my first choice to flavor a bread. A short search of my files revealed a recipe for a vegan quick bread that incorporated these lovely berries.

For altitude I reduced sugar and baking soda. I added milk, although there was none, to help with dryness at altitude.To make it a little healthier, I took out some regular flour and put in whole wheat. The last change was substituting ginger for cinnamon, but that was merely to please my own taste buds. Add vegan cream cheese and fresh strawberries to a slice, and you’re set.

Strawberry Tea Bread adapted from Strawberry Quick Bread
1 1/4 cups sugar
2/3 cups canola oil
1 TBS arrowroot powder
1/4 cup unsweetened applesauce
1 TBS unsweetened non-dairy milk
1 1/2 cups mashed strawberries with their juice
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp lemon juice
1 tsp vanilla extract
3/4 tsp powdered ginger
1 cup whole wheat flour
2 cups all purpose flour
Preheat oven to 400F. Grease 3 cavities of a mini loaf pan. In a large bowl, mix sugar and oil. In a small bowl, combine arrowroot and applesauce, then add to large bowl and stir. Stir milk and strawberries with juice into sugar mixture. Add baking soda, baking powder, and lemon juice, and whisk to combine evenly, without lumps. Stir in vanilla and ginger. One cup at a time, add flours and stir to incorporate into a smooth batter.
Pour batter into prepared loaf pan. Bake for 30-33 minutes until tops turns golden brown. Remove to a wire rack and run a knife around the edges of each loaf. Allow loaves to cool for at least 10 minutes before turning them out to cool completely on a wire rack.

Another way to keep things cool is to eat a dessert right out of the fridge. When that treat combines the best of summer’s red fruit with chocolate, then you have a real winner.

I saw a video of this gorgeous tart on social media. A bit of searching revealed the author’s website and original recipe. It has quite a few steps, and requires advanced planning, so I chose to use store-bought jam instead of making my own. With that it comes together quite easily.

Enjoy this beautiful tart in a big showy presentation, or make mini tartlets for a gathering. Either way, just remember that a baked cake can sometimes be a no-bake cake.

Equipment

  • 9” tart pan with removable base
  • food processor
  • Blender

Ingredients

for the crust

  • 2 cups 250 grams coarsely chopped walnuts toasted (see note)
  • 1/4 cup cocoa powder
  • pinch salt
  • 200 grams 10 large, soft dates pitted
  • 1 teaspoon vanilla extract

for the fruit filling

  • 2 cups 280 grams raw cashews soaked in water for 4 hours
  • 1/4 cup maple syrup at room temperature
  • 1.5 cups 6 ounces fresh raspberries and/or strawberries
  • 1/4 cup cranberry-pomegranate juice at room temperature
  • 1 teaspoon rose water food grade, at room temperature
  • 40 grams cocoa butter food grade, melted

for assembly

  • 1/2 cup seedless raspberry jam stirred
  • fresh red berries and nuts

Instructions

  • Use a parchment circle to line the bottom of a 9” tart pan with a removable base. Set aside.
  • Place the walnuts, cocoa powder, and salt in the bowl of a food processor. Process until the mixture resembles small crumbs. Add the dates and vanilla, and process until the mixture forms a ball. Test the mixture with your fingers. If it is too dry then add an extra date; if it is too wet then add more cacao powder.
  • Tip the crust mixture out into the prepared tart pan. Press the mixture firmly into the bottom and up the sides of the pan. Flatten the crust by taking a clean water glass and pressing it into the bottom of the crust. Set the filled pan in the freezer for 30 minutes. After 30 minutes, remove from the freezer and gently take the crust from the pan. Place the crust on a baking sheet and put it in the fridge while you make the filling.
  • To make the fruit filling, drain the cashews and add them to a blender along with the maple syrup, berries, juice, and rose water. Blend until very smooth and creamy, using a tamper as needed. Add the melted cocoa butter and blend again until smooth.
  • Remove the baking sheet with the crust from the fridge. Spread the jam in an even layer over the crust. Spoon the filling evenly over the jam layer. Decorate with berries and nuts. Set the sheet with the tart in the freezer for two hours.
  • Prior to serving, remove the tart from the freezer and place it in the fridge for at least six hours. Remove from the fridge, slice into wedges, and serve. Leftovers can be stored in the fridge in an airtight container for up to five days.

Notes

To toast nuts, preheat your oven to 325F. Spread the nuts in a single layer on a baking sheet. Bake until the nuts are fragrant and slightly browned, 5–8 minutes. Remove the baking tray from the oven and pour the nuts into a bowl to cool slightly.

Sweet Heart Chocolate Cupcakes for My Sweetheart

Ah, Valentine’s Day … a time when everything is made into the shape of a heart. I couldn’t resist the trend after watching a trick for making heart-shaped cupcakes without a special pan. All that is required is a muffin tin, paper liners, and a bit of foil.

Prepare your cupcake batter, such as the version of my favorite chocolate cupcakes below. Before you portion the batter into the lined muffin tin, take strips of foil and form them into small balls. Take one foil ball, place it in a cavity on the outside of a liner, then crease the liner against it to form a heart shape. Repeat to make 12 cute heart-shaped cupcakes!

My heart cupcakes were made using my go-to chocolate cupcake recipe, although this time I tried a new plant milk from sesame seeds. Because the milk is a bit thicker, it made a more dense batter that I easily remedied by adding more liquid. On the upside, the thicker milk did make the frosting creamy and more luxurious.

To make a Valentine-themed cupcake, I added strawberry jam to the filling because chocolate loves strawberry. Next I accented the heart shape with pink frosting then gave the sweet heart to my sweetheart.

Sweet Heart Chocolate Cupcakes with Strawberry Filling

For the cupcakes
1 cup + 4 teaspoons Hope & Sesame Organic Sesamemilk
1.5 teaspoon apple cider vinegar
3/4 cup organic sugar
1/3 cup canola oil
3/4 teaspoon vanilla extract
1 cup + 1 tablespoon all-purpose flour
1/3 cup Dutch-process cacao powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
for the frosting
1/4 cup vegan shortening
3/4 cup Miyoko’s Creamery Cultured Vegan Butter, salted
3 1/2 cups organic powdered sugar
2 teaspoons vanilla extract
1/8 cup Hope & Sesame Organic Sesamemilk
for the filling
2 tablespoons strawberry preserves
decorations (optional)
red food coloring
red decorative sugar

Preheat oven to 350F. Line a 12 muffin pan with paper liners and set aside. Whisk together the 1 cup + 4 teaspoons milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add sugar, oil, and 3/4 teaspoon vanilla to the milk mixture and beat until foamy.

In a medium bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to the wet ingredients and beat just until no large lumps remain. Place foil balls (described in post above) into the muffin pan alongside the paper liners. Pour batter into the liners, filling three-quarters of the way.

Bake for 18-19 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Transfer to a wire rack to cool for 10 minutes, then tip the cupcakes out onto a wire rack to cool completely.

While the cupcakes cool, make the frosting and filling. Place the shortening and vegan butter in a stand mixer fitted with a paddle blade. Beat until just combined. Add 1 cup of powdered sugar and 2 teaspoons vanilla to the bowl and beat again. Add the powdered sugar 1/2 cup at a time, adding the milk when the mixture get too dry. Once all frosting ingredients have been added, let the stand mixer run for several minutes until the frosting is light and creamy.

For the filling, place 1 cup of frosting in a bowl and mix it with the strawberry preserves. Using a knife or cupcake corer, remove a small portion of the center of each cooled cupcake. Using a spoon, add the filling to the holes. Don’t worry if it’s slightly messy as you will be frosting the tops of the cupcakes.

Divide the rest of the frosting as you wish, tinting some of it with red food coloring or leaving it all white. Decorate the tops of the frosted cupcakes with red sugar, if desired.

When I started my journey of seeking milk that didn’t come from a cow, the options were very limited. It may have been rice milk and three brands of soy milk. These days you can find milk beverages made from those two bases, alongside others consisting of almonds, oats, peas, hemp seeds, coconut, cashews, macadamias, quinoa, peanuts, pistachios, walnuts, bananas, hazelnuts, and flax seeds.

Plant milks are so popular now that they have their own holiday. Today is World Plant Milk Day, a celebration of plant-based dairy alternatives that is recognized internationally. People all over the globe can find a way to enjoy a milky beverage that is better for their health, the environment, and the animals.

The website behind this celebratory day explains that a “dairy-free lifestyle has the power to make you feel fantastic, now and in the long-term future. You may experience increased energy, less bloating, improved digestion, clearer skin, reduced asthma symptoms, less inflammation, and other lasting health benefits when you make the switch away from dairy.”

In honor of this day, and to offer you a way to easily get involved, I made a plant-based milkshake. Strawberry Cheeseshake

1/2 cup raw cashews
2 tablespoons water
1 tablespoon lemon juice
3/4 teaspoon melted coconut, grapeseed, or rice bran oil
1/8 teaspoon salt
3/4 cup cut frozen strawberries
1/2 cup unsweetened plain or vanilla dairy-free beverage
1 tablespoon agave nectar or sugar
1/4 teaspoon vanilla extract
Graham cracker crumbs (gluten free, if needed) for garnish (optional) (note: I used cacao nibs)
2 fresh strawberries, for garnish (optional)

Put the cashews in your spice grinder or food processor and whiz until powdered, about 30 to 60 seconds.

Put the cashew powder, water, lemon juice, oil, and salt in your blender or food processor and blend until smooth.

Transfer the cashew mixture to an airtight container and refrigerate for 2 hours or more, to allow the flavors to mingle and the consistency to thicken.

Put the chilled cashew mixture, frozen strawberries, milk beverage, sweetener, and vanilla in your blender and blend until smooth and creamy.

Pour the shake into 2 glasses and garnish each.

Almond Butter Brownies with Strawberry Frosting to Celebrate Love

Today I was going to make an easy recipe for Valentine’s Day. A no bake treat or a quick cupcake sounded good. But, as I was scanning through my recipe files my sweetie leaned over my shoulder, peered at the computer screen, and said, “Yum, brownies.” So, today I have brownies. Not just any brownies for my favorite sweets tester. As a nod to the holiday I made brownies slathered in strawberry frosting because Cupid’s day often demands strawberries and chocolate.

The vegan brownie recipe my love ogled had peanut butter as an ingredient. He doesn’t do well with peanuts, so I used almond butter instead. You can choose any nut butter, but keep in mind that the amount of salt used in the brownies can change due to the salt content of your nut butter. I also added aquafaba to help give the brownies more rise that can be lost at high altitude. And, I added strawberry extract to ramp up the strawberry-ness. If you don’t have it, you can add more vanilla extract.

A search on Food Network offered me a recipe for the perfect frosting. To veganize it I used vegan margarine and shortening in place of butter, in addition to substituting the milk with a non-dairy variety. I also halved the recipe as it was plenty for one tray of brownies. The marriage of strawberries and chocolate is sublime, and these brownies are sure to be a hit with your Valentine.

Almond Butter Brownies with Strawberry Frosting adapted from My Quiet Kitchen and Food Network

Almond Butter Brownies

1 cup plus 2 TBS old-fashioned rolled oats
1/2 cup raw cacao powder
1 scant tsp baking soda
1/2 cup dark brown sugar
1/8 tsp cardamom
1/8 tsp salt
3/4 cup unsalted almond butter
1/2 cup plus 2 TBS unsweetened almond milk, or other non-dairy milk
1/4 cup maple syrup
1.75 tsp vanilla extract
1/4 tsp strawberry extract
1 TBS aquafaba (bean water)
1/2 cup mini vegan chocolate chip

Preheat oven to 350F. Line an 8 x 8” baking pan with parchment paper. Process the oats in a food processor until there are only a few little pieces. Add the cacao powder, baking soda, brown sugar, cardamom, and salt. Pulse to combine. Transfer the dry mixture to a bowl. To the now empty food processor add the almond butter, non-dairy milk, maple syrup, vanilla extract, strawberry extract, and aquafaba. Process until smooth. Add the dry mixture to the food processor and pulse until all is combined. Fold in the mini chocolate chips, then spread the batter into the prepared pan.

Bake for 29-32 minutes. The brownies are done when a toothpick inserted into the center (but not into a chocolate chip) comes out with a few crumbs. Remove the pan from the oven and let cool on a wire rack for 10 minutes. Using the parchment paper excess, remove the brownies from the pan and place on a wire rack to fully cool. Once completely cooled, spread the brownies with strawberry frosting (recipe below) and cut into squares.

Strawberry Frosting

2 TBS vegan margarine, at room temperature
2 TBS shortening
2 cups powdered sugar, sifted
2 TBS non-dairy milk, at room temperature
1/2 tsp vanilla extract
1 TBS strawberry all-fruit spread

In the bowl of a stand mixer, beat the margarine and shortening until there are no lumps. Add half of the powdered sugar, along with the non-dairy milk and vanilla, and beat until smooth and creamy. Add the remaining powdered sugar and the strawberry fruit spread, and beat until smooth.

You have probably already realized that Valentine’s Day is in a few days. You may want to make a grand dessert for the occasion, but it could require planning ahead. So, today I offer you the idea of making a trifle, with shortcuts for a quicker reward.

If you are new to the world of a dessert trifle, here is the definition from Merriam Webster, “A dessert typically consisting of plain or sponge cake often soaked with wine or spirits … and topped with layers of preserves, custard, and cream.” This English treat, fit for a King, has many components and can take a few days to make. But, if you are okay with straying away from a traditional format, you can still come up with a winning dessert.

The base of this treat is usually a white cake however, any sturdy cake will do. You can easily use my Strawberry Tea Bread, as you will break it up into chunks before placing it on the bottom of your trifle bowl. Also, this layer is often doused with wine, but I prefer to see this as optional. I think that the tasty bread will offer plenty of flavor without adding alcoholic spirits.

After that you will need something custardy. You can choose any custard, but chocolate mousse is what I pick for my chocoholic family. A good option is the mousse from my Chocolate Mousse Pie with Cookie Crust and Raspberry Coulis; you will not need to make the crust from this recipe.

Next up is a layer of fruit. There are many selections that can be chosen from this category. Try jam, roasted fruit, or fresh berries (fresh strawberries would nicely complement the tea bread.) Here again is the option to add alcohol, if you desire. You can also use the Raspberry Coulis from the post mentioned above.

Traditionally the next item would be a creamy sauce, but I like to simplify this. Ice cream is fun to add, as long as it’s spooned in at the end and the dish is served immediately. The great part about using ice cream is that there are so many flavors to choose from. That, and the fact that you can grab a pint out of your freezer without worrying about making something else for this layered goody.

The final piece of the trifle puzzle is a garnish for the top. It can be anything, but if your last layer was ice cream then an apropos choice is something that could be included in an ice cream sundae. For my dessert I chose a sprinkling of my Lavender Granola. After that I spattered melted chocolate on it, à la artist Jackson Pollock. I think it adds a bit of whimsy. It also adds a taste of chocolate to a dessert that some people (like my husband) would consider lacking in chocolate immersion. But, I suppose, you can make every layer a chocolate version and bowl over your chocolate-loving sweetheart.

Valentine’s Day is coming up so I thought I’d have some fun making chocolates. For simplicity I went with a rolled variety, where the forming tool is your hands, and a version made in silicon molds, where chocolate tempering is not required.

The first recipe, that I like to call Strawberry Covered Chocolates, is a riff on a truffle from Dr. Gregor’s cookbook. I had coconut sugar in my cupboard, so I used that, but know that this healthy treat originally called for date sugar. To enhance the truffles’ Valentine’s Day status, I rolled the candies in strawberry powder. If you can’t find that in your market, see if you can find freeze dried strawberries. You can run them through a coffee grinder and – presto – strawberry powder.

My other chocolate candy choice is an old favorite that I make. I can’t remember how the recipe evolved but I use as few ingredients as possible to get the boldest flavor. You will find that they are true to the peanut butter and chocolate tastes without any unnecessary fillers.

Today I offer you two recipes, in the name of love and chocolate. Show love to yourself and others with these decadent vegan candies.

Strawberry Covered Chocolates based on Almond-Chocolate Truffles from “The How Not To Die Cookbook” by Michael Greger, M.D. and Gene Stone

1/3 cup chopped and pitted soft dates *
1/3 cup raw cashews soaked in hot water for 3 hours and then drained
3 tablespoons almond butter
1/2 cup unsweetened cocoa powder
1/4 cup coconut sugar
1 tsp vanilla extract
Strawberry powder, for coating

Combine dates and cashews in a food processor and process to a paste. Add almond butter and process to combine. Add cocoa powder, coconut sugar, vanilla, and 1 teaspoon of water. Pulse until well combined.

Pinch a piece of the mixture between your fingers to see whether it holds together. If it’s too dry, add a little more water, 1 teaspoon at a time, until the mixture can be shaped into balls. (The amount of water added can depend on the amount of moisture in your dates.) If the mixture is too soft, refrigerate it for 20 minutes or longer to firm up. If it’s still too soft, add a little more cocoa powder, 1 teaspoon at a time. The mixture should be slightly glossy.

Use your hands to shape and roll a small amount of the mixture into a ball and transfer to a plate. Repeat until all of the mixture has been formed into about 24 balls. Put the plate in the fridge for 10 minutes for the balls to dry out a bit.

Place the strawberry powder in a shallow bowl. Roll the chocolates in the powder until they’re coated, patting off the excess powder. Transfer the candies to a plate and refrigerate until firm.

* If your dates are not soft, soak them in hot water for 20 minutes. Drain and pat dry before using.

 

Sweetheart Peanut Butter Cups

3/4 cup creamy peanut butter
2 TBS coconut palm syrup (you can use agave syrup instead)
1/2 tsp vanilla extract
9 ounces bittersweet chocolate (at least 65% cocoa), chopped

In a bowl, mix peanut butter with coconut palm syrup and vanilla until smooth. Cover with plastic wrap and place in the fridge to chill.

Melt chocolate in the top of a double boiler, stirring frequently until smooth. Remove from heat. With a pastry brush, apply a generous layer of chocolate inside each cup of a silicon mold. The chocolate cups should be sturdy enough to hold the filling, so coat the bottom and sides but don’t fill them to the top. Place the mold in the fridge for 30 minutes so the chocolate hardens.

Reheat remaining chocolate until smooth. Spoon about 1/2 TBS peanut butter filling into each chocolate cup. With a clean spoon, quickly spoon remaining melted chocolate over the filling to cover. Refrigerate until chocolate hardens, for 20 minutes. Unmold hardened chocolates.

For my New Year’s Eve Celebration I had to come up with something special. Something chocolate. And champagne. And strawberry. I saw pipette kits for infusing cupcakes with liquid and knew I had my solution. I just had to bring it all together.

My standby chocolate cupcake recipe was the base so I didn’t need to make adjustments there. I added powdered dried strawberries to the frosting to complement the champagne that would be imbued into the cupcakes. I now had a decadent dessert worthy of ringing in the New Year. Happy and Decadent 2017 to all!

1 cup almond milk
1 tsp apple cider vinegar
3/4 cup organic sugar
1/3 cup canola oil
3/4 tsp vanilla extract
1 cup + 1 TBS all-purpose flour
1/3 cup Navitas Naturals cacao powder
generous 1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
frosting
1/2 cup nonhydrogenated shortening
1/2 cup nonhydrogenated margarine
3 1/2 cups organic powdered sugar, sifted if clumpy
1 TBS powdered freeze dried strawberries (I used Just Strawberries)
3/4 tsp vanilla extract
1/4 cup almond milk

For Cupcakes: Preheat oven to 350F and line a 12-cupcake pan with paper liners. Whisk together the milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add sugar, oil, and vanilla to the milk mixture and beat until foamy.
In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat just until no large lumps remain. Pour evenly into liners, filling three-quarters of the way. Bake 18-19 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and cool completely.
For Frosting: Beat shortening and margarine together until well combined and fluffy. Add powdered sugar and beat for 3 more minutes. Add dried strawberries, vanilla and milk and beat for another 5-7 minutes until fluffy.
For Decorating: Frost cooled cupcakes. Dip pipettes into champagne and draw some liquid up into the bulbs. Insert pipettes into cupcakes without squeezing; you will squeeze them just before eating.

Chocolate Strawberry Snack Bars

chocolate strawberry snack barI was craving a snack, and I had oat flour to use up, so these bars were born. They’re a yummy combination of chocolate and strawberry with the healthiness of oats. It’s a fairly simple recipe to make, after you get a few things chopped. Plus, you can eat them for a breakfast treat.

The recipe I found had blueberries but I envisioned a chocolate covered strawberry. I also swapped out some all purpose flour for the oat flour I mentioned. Baking powder and milk were included to give lift to the gluten-free oat flour and add moisture needed at high altitude.

Chocolate Strawberry Snack Bars based on Blueberry Crumble Bars
1 cup all purpose flour
1/2 cup oat flour
1.5 cups rolled oats
3/4 cups brown sugar
1 tsp baking powder
1/2 tsp sea salt
1/2 TBS almond milk
7 TBS vegan margarine, cubed
2.5 oz dark chocolate, chopped
1/2 cup vegan sugar
1 TBS arrowroot powder
1 lb strawberries, chopped and drained
Line a 9×9” pan with foil, leaving overhanging flaps, and grease with shortening. In a food processor pulse together flours, oats, brown sugar, baking powder and salt until combined. Add in milk and margarine and pulse until combined. Divide mixture in half and press half into bottom of prepared pan to form a crust. Spread chopped chocolate over crust.
In a bowl, whisk together vegan sugar and arrowroot. Add in strawberries and coat in sugar mixture. Spread berries on top of crust. Spread remaining crust mixture on top of berries and press lightly. Refrigerate pan for 15 minutes. Preheat oven to 350F. Bake for 35-40 minutes until fruit starts to bubble. Store in fridge for 3 days in an airtight container.

Rhubarb. I opened up my farm box and that’s what stared back at me. Of course I had heard of rhubarb before but I had never tried it. Not knowing what it tasted like meant I didn’t know what to do with it. I had seen rhubarb recipes before but they were for jam (with lots and lots of sugar) or for pie (and I don’t like pie – it’s a crust thing). So I began an extensive search on the vegetable.

The recipe that finally caught my eye was for a crumble. I was intrigued by the fact that it contained turmeric, that anti-inflammatory herb that has received so much press lately. Another ingredient in the recipe got my attention – the lack of refined sugar. I had found a recipe for a healthy and delicious dessert that I could easily modify.

The changes I made were simple. First off I adapted it to include my star ingredient – rhubarb. Next, I decided that this dish should contain some healthy fat in the form of coconut oil. Why add fat? Well, the crumble seemed like it would make a nice breakfast. It had protein, fruit and fiber, but it needed a little fat to round it out. Here it is, ready for breakfast or dessert.

¼ cup + 2 TBS maple syrup, divided
1 TBS dried ground turmeric
2 cups diced rhubarb
2 cups hulled and quartered strawberries
1 cup almond flour
2 TBS cold coconut oil
¼ cup almonds, chopped
¼ cup walnuts, chopped
1 tsp cinnamon
⅛ tsp nutmeg
⅛ tsp sea salt
Preheat oven to 375 F. Lightly grease an 8×8” baking dish. In a bowl, combine ¼ cup maple syrup and turmeric. Add rhubarb and strawberries and toss to coat. Add mixture to baking dish. In a bowl, combine almond flour, 2 TBS maple syrup, and coconut oil. Mix in almonds, walnuts, cinnamon, nutmeg, and salt. Evenly spread topping over mixture in baking dish, breaking up clumps as you go. Bake for 30 – 35 minutes, until berries are bubbling and topping is golden. Serve warm.
