Lava cakes are fascinating; they ooze chocolate as if by magic. The desserts are designed somewhat like a chocolate torte combined with a little bit of soufflé. Their lush chocolate flavor deepens as the outside cake sets, yet the inside remains deliciously gooey. In a traditional recipe, this molten center is enhanced with the use of eggs. In preparing this dessert vegan-style, I turned to a chunk of chocolate to recreate the melted interior.

My search for lava cake recipes revealed several, but I chose one that was already vegan to make things easier. For high altitude, I merely reduced the leavener slightly. Next I scaled it down to make just one cake, and it’s good that I did. This treat is so intensely rich that half of the cake was extremely satisfying. I easily shared it, but you can double the recipe if you aren’t in a sharing mood.

Molten Lava Cake adapted from Vegan Chocolate Lava Cakes

Shortening, to grease the ramekin
1 TBS cocoa powder, plus extra for dusting the ramekin
1 ounce unsweetened soy milk
1/4 tsp apple cider vinegar
1/8 cup + 1/4 tsp all purpose flour
scant 1/8 tsp baking powder
pinch sea salt
1 TBS + 1 tsp vegan sugar
1/2 TBS vegan butter, melted
1/8 tsp vanilla extract
1/8 cup unsweetened applesauce
1 TBS vegan mini chocolate chips, melted
1 piece dark chocolate
Chocolate shavings and vegan whipped cream, optional

Preheat oven to 375F. Grease a 3-ounce ramekin and dust with cocoa powder. Shake out the excess powder. Add milk and vinegar to a bowl and whisk. Set aside a few minutes to curdle.

To a medium bowl, sift together 1 TBS cocoa powder, flour, baking powder, and salt. To a medium bowl, add sugar, melted butter, vanilla, and applesauce. Add curdled milk and whisk until foamy. Add dry ingredients to wet ingredients and stir until no large lumps remain. Add melted chocolate chips and stir again. Pour batter into prepared ramekin. Push piece of chocolate into center of batter, then push batter over chocolate to cover.

Place filled ramekin on a baking sheet. Bake 18-20 minutes, or until the edges have pulled away slightly and the top no longer feels wet. Place the ramekin on a wire rack to cool for 5 minutes. When cool, run a knife along the edges of the cake to loosen it. Put a plate over the ramekin and carefully invert the cake onto the plate. Dust the cake with chocolate shavings and add a dollop of whipped cream. Serve immediately.

Celebration Blueberry Oat Bar

Today is the celebration of Independence Day in America. Befitting the red, white and blue color scheme that accompanies the holiday, I chose to bake a blueberry bar and top it with whipped cream and strawberries. Because I was sharing the bar with friends that have selective eating habits, I opted for dairy free, egg free, soy free, refined sugar free, gluten free, and nut free. Or, as my husband calls it, the BFF Bar – Blueberry Free From Bar.

To bump up the health factor on the bar recipe I found, I used whole oats to add fiber and texture. I also chose maple syrup and dark brown sugar for their added health benefits. After I realized I didn’t have enough fresh blueberries, I discovered that frozen works as well as long as they are fully drained. For a garnish I used vegan whipped cream and sliced strawberries even though the blueberries turned dark when baked. It became red, white and black, but I like it anyways.

1 1/2 cups gluten-free whole oats
1/2 cup gluten-free flour
1/2 cup organic dark brown sugar, firmly packed
1/4 tsp baking soda
1/8 tsp salt
6 TBS soy-free Earth Balance margarine, melted
1 1/2 cups blueberries, fresh or frozen, rinsed and drained
3 TBS maple syrup
2 tsp arrowroot
1 tsp lemon juice
vegan whipped cream from a tub or can, for garnish
sliced strawberries, for garnish
Preheat oven to 350ºF and grease an 8×8” baking pan. In a bowl, whisk together oats, flour, brown sugar, baking soda and salt. Add melted margarine and stir with a fork until evenly combined. Save ½ cup crumb mixture for topping. Press remaining mixture evenly and firmly into bottom of prepared pan. Bake for 12 minutes to set crust.

While that is baking, combine blueberries, maple syrup, arrowroot and lemon juice in a small saucepan, whisking until arrowroot dissolves. Heat over medium heat until mixture comes to a simmer. Simmer, stirring occasionally, until juices are no longer cloudy, about 2 minutes. Spoon filling over baked crust and evenly spread reserved crumb mixture over top. Bake for 30 minutes. Let cool completely in pan. Cut into squares and garnish with whipped cream and strawberries before serving.

Audrey’s Naked Chocolate Cake

Audrey's Naked Chocolate CakeThis baking experience began as a friend’s Facebook post. She showed a photo of a Naked Chocolate Cake and I took that as a challenge to make it high altitude and vegan. I enjoy a challenge, and it looked yummy. Also, I had some new cake pans that I needed to test.

To make the cake at altitude, I added flour and milk and reduced the baking powder. To take into account the short, layer-cake pans, I sliced the strawberries so they wouldn’t topple the cake. I baked at a lower temperature for a shorter time. And, with the small layers, I tried one to see if the cake came out. This will make four layers, or three layers and a snack.

The original recipe called for homemade whipped cream. I couldn’t achieve a thick enough cream to hold up the cake without using coconut cream, which I don’t like, so I used the vegan stuff in a can. I made up for it by making my own chocolate syrup. Feel free to use store-bought syrup, or you can make your own, too.

1/2 cup coconut oil, melted
1/2 cup dark brown sugar
1/4 cup unsweetened applesauce
3/4 cup vanilla soy yogurt
2 tsp vanilla extract
1 cup + 1 TBS whole wheat flour
1 cup + 1 TBS all-purpose flour
1 3/4 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1/2 cup cocoa powder
3/4 cup + 1 TBS soy milk
1 cup chopped semisweet chocolate
1/2 pint fresh strawberries, sliced
1/2 pint fresh blueberries
1/2 pint raspberries
whipped cream
chocolate syrup (recipe to follow)
Preheat oven to 325 F and spray four round, mini layer-cake cake pans. Pour coconut oil into a stand mixer with a paddle attachment. Add in brown sugar, applesauce, yogurt and vanilla extract, and mix until combined. In a separate bowl sift together flours, baking powder, baking soda, salt and cocoa powder.
With mixer on low, slowly add a third of the dry ingredients into the applesauce mixture, alternating with milk. Keep alternating until dry ingredients and milk are gone. Remove bowl from stand mixer and fold in chopped chocolate by hand. Divide batter between cake pans. Bake for 17 to 19 minutes or until an inserted toothpick is removed clean. Cool cakes in pans for 5 minutes then transfer to a wire rack.
To assemble, place a cooled layer of cake on a cake plate and cover in whipped cream and some chocolate syrup. Take fruit and spread it on cake out to the edges. Pay attention to how you place fruit on the edge so it looks nice and doesn’t fall out. Once cake is covered in fruit, place next layer of cake on top. Fill in with whipped cream, chocolate syrup, and fruit. Place final layer of cake on top. Place a mound of whipped cream and fruit on top. Drizzle chocolate sauce over the cake and chill.
Chocolate Syrup
1 cup dates, sliced
water
2 TBS cocoa powder
Place dates in a bowl with water to cover. Soak for 5 minutes. Put dates and their soaking water in a high speed blender. Add cocoa powder and blend until a syrup forms. Add extra water as needed. You will probably have some leftover, but that’s not a bad thing.
